Excite Your Taste Buds with this African-Inspired Black-Eyed Peas Recipe

To make this delicious dish, you'll need 2 cups of dried black-eyed peas (which is roughly about 12 ounces), along with kosher salt to taste. Other ingredients include 4 tablespoons of unsalted butter, 1 large finely chopped red onion, 1 and a 1/2 tablespoons of minced, peeled, fresh ginger, 3 minced garlic cloves, 1 seeded and minced habanero chili, and 2 teaspoons of berbere seasoning. Furthermore, you'll need 1 teaspoon of ground turmeric, 3 medium-sized chopped tomatoes, 1 cup each of coconut milk and chicken stock (or you can opt for low-sodium broth if you prefer). Finish off with 2 thinly sliced scallions and 1/3 cup of chopped cilantro.
The first step in this flavorful journey is to boil the black-eyed peas. Put them in a large saucepan and pour in enough water to cover them. Let them boil at a moderate to low heat until they become tender - this should take about 40 minutes. After that, add a generous helping of salt, leave it for 5 minutes, then drain.
While your peas are cooking, get another large saucepan and melt your unsalted butter in it. Now, throw in your finely chopped onion, minced ginger, garlic, and chili. Cook these on a medium heat, stirring now and then until they're adequately softened and slightly browned. This usually takes around 10 minutes. Now, add the berbere and turmeric and stir until the aroma starts to fill your kitchen - around 2 minutes. Next, add your tomatoes and continue stirring until they soften, which should take about 5 more minutes. Now it's time to bring in the coconut milk and stock, bring it to a boil then let it simmer on medium-to-low heat, stirring intermittently, until your tomatoes break down and your sauce becomes thick. This should take another 20 minutes.
At last, it's time to mix in your cooked black-eyed peas with your sauce. Keep the heat at a moderate to low setting and stir until the peas are lightly coated. This should be done in about 10 minutes. Your final step is to fold in the cilantro and scallions then serve your delightful dish.
Note: Berbere is a ground red chili spice mix from Ethiopia. It can be found at specialty food stores or online.
